The Road from Laura to Lakeland Roadhouse

Rachel at Steffy's We drove from Fairview through Laura to the Lakeland Roadhouse where we had time to have a hamburger while waiting for the bus to Cairns. We stopped at Steffy's on the way. The roadside stall was selling potatoes, onions, eggplants, lemons and local honey.

Scotch Eggs and Barramundi Saturday 24th Dinner

Scotch eggs In food processor add a chopped onion, garlic, tomato, carrot and process. Add mince and process. Mix well with fresh breadcrumbs and season to taste. Form into balls. Hard-boil eggs, Peel and place an egg in the mince ball and form into ball about size of a tennis ball. Dip in flour and beaten egg and breadcrumbs. Can be decrumbed for a stronger crust. Deep-fry in hot oil, or can be baked in oven. Serve with chips and vegetables. Makes a great smoko snack for the next day eaten cold.

Lasagne and Scotch eggs... Sunday dinner 25th

Lasagne Cook sliced onions with garlic and ginger in oil. Add grated carrot, tomatoes and mince and cook until browned. Add Worcester sauce, and salt and pepper. Add flour and water and mix well. Simmer one hour. I did not have any tomato paste so added some chilli sauce and a spoon of sugar. Make a white sauce. Cook onions, add flour and milk and simmer stirring until thickened. Add grated cheese and salt and pepper and parsley. Line a pan with Lasagne pasta sheets, add third of mince mixture and third of sauce. Add another layer of pasta and repeat. Add final layer and white sauce on top. Sprinkle breadcrumbs, some grated cheese and parsley on top and bake 40 minutes 180C
