Rissoles and Fried egg rice







Rissoles
Fry a sliced onion, add some tomato and capsicum and mix in minced meat. Add 2-3 eggs, season to taste with salt, pepper and parsley or mixed spice,  and mix in a cup or more of fresh bread crumbs. Form into balls, dip them into beaten egg and breadcrumbs and cook in hot oil.
Serve with gravy or tomato sauce, vegetables and pasta or rice, and salad
