Scotch Eggs and Barramundi Saturday 24th Dinner







Scotch eggs
In food processor add a chopped onion, garlic, tomato, carrot and process. Add mince and process.
Mix well with fresh breadcrumbs and season to taste. Form into balls.
Hard-boil eggs, Peel and place an egg in the mince ball and form into ball about size of a tennis ball.
Dip in flour and beaten egg and breadcrumbs. Can be decrumbed for a stronger crust.
Deep-fry in hot oil, or can be baked in oven.
Serve with chips and vegetables.
Makes a great smoko snack for the next day eaten cold.
