Scotch Eggs and Barramundi Saturday 24th Dinner

Scotch eggs In food processor add a chopped onion, garlic, tomato, carrot and process. Add mince and process. Mix well with fresh breadcrumbs and season to taste. Form into balls. Hard-boil eggs, Peel and place an egg in the mince ball and form into ball about size of a tennis ball. Dip in flour and beaten egg and breadcrumbs. Can be decrumbed for a stronger crust. Deep-fry in hot oil, or can be baked in oven. Serve with chips and vegetables. Makes a great smoko snack for the next day eaten cold.

Southern fried chicken and chips

I used a packet mix called, Southern fried Chicken. Simply dipped the chicken pieces into the mix and cooked the chicken in oil until golden and cooked. It was delicious served with a slice of lemon. If you want to make your own breadcrumbs... add ginger, garlic, parsley, cinnamon, salt, pepper, chives, and dip chicken in beaten egg and then the spiced breadcrumbs and fry inn oil.

Grave of Dennis at Laura

Grave of Dennis at Laura Dennis was an owner here. The story is that he went driving in his car, had a heart attack and died at the gate. His grave is just at the Entrance to Fairview, and he is reputed to haunt the new Kitchen and leave the top drawer open.
